Never thought id waste a sweet sweet drop of my 101 on food but for this i will everytime lol i just started makin it recently n wish i knew bout it along time ago. they had me at bacon. but bacon jam
this stuff is gonna make a great topper for brats, burgers, pulled pork or like im doin now just eatin it out da jar lol dont judge its candied bacon crack lol. i looked up a bunch of recipes n pieced my own version together one regular n one hot ill explain the hot version as we go heres what we need
1 1/2.lb bacon
2.c shallot u find em by the garlic there onions wit a mild garlicy flavor. fancy shit rite lol
1.c sweet onion of any kind. yellow or white
1 1/2.tbsp minced garlic. fresh or bottled
1/4.c apple juice
1/4.c any bourbon( if u dont want to use bourbon use another 1/4.c apple juice )
1.c real.maple syrup
1 1/2.c brown sugar
1/4.c apple cider vinagar
1.tbsp honey
1.tbsp chili powder
1/2.tbsp smoked paprika
n if u want it hot which who doesn’t lol u need one habanero or one jalapeno for less heat ya big baby lol
k first off get yo bacon cooked how ever u do it. i do mine in da oven as my boys know. on a foil lined pan i place em in a cold oven then set it to 410° and keep a eye on em. usually takes bout 20 min. we want em crispy
now we need to save a few tablespoons of da grease n put it in a big fryin pan i just pour it out da tray into my pan lol. and drain the bacon on sum paper towels or racks
not sure whats harder not eatin all that bacon or not drinkin all da bourbon or both lol. movin on we need to get peelin and choppin da shallots n sweet onion. i just cut em up a bit n put em in da food processor for bout 6 sec. we want em diced but not mushy lol at this point if u want it hot throw your pepper of choice in wit the onions. cut em up til u get a cup of sweet and 2 cups shallots. so do em seperate. duh rite. sorry also if you are usin fresh garlic(im usin jarred cause i forgot to buy any lol) throw it in wit da onions if u want just make sure its diced up good
now we got our onions n stuff diced up we can add em to da pan with da bacon grease in it
k turn yo burners on med to med high n start carmalizin yo onions stirrin every few min for bout 12 to 15 min or til they soft n lighty browned
now add the paprika n chili powder,bourbon,maple syrup and apple juice
after its boiled 5 min add the apple cidar vinager, brown sugar and honey and continue boilin for 3 min
after 3 min we can reduce heat to med/low n cut our bacon up tiny ( i use kitchen shears cauz i cheat lol ) and add that to the pan
stir in da bacon real good and simmer on low for bout 20 min or til most liquid is gone and the mix is jam like
u can see how much it cooks down but theres still gonna be sum bacon grease in there which is cool if u gonna use it all that day but if u gonna jar it up for later its best to put da mix into a sieve(mesh strainer) n strain out da grease. just put it in a sieve in da sink for bout 10 min stirrin it up ever few min. youll be suprised how much grease comes out lol. mmm bacon grease tho
now its ready to slap on sum meat or jar up for later
i read around n its good for a week in da fridge but it wont last that long lol n since its meat it would need pressure canned to preserve it for da long run to reheat either microwave it (boo i hate that thing) or place jar in a pot of cold water n bring to boil for 10 min is my way n works great. just dont add to boilin water lol. enjoy
