
yearzzz ago i use to always make jambalaya using zatarans box mix which besides instant mashed potatoes was the only box dinner id use cuz my oldest boys at the time loved it n if i made jambalaya n they didnt see the box they didnt want it as bad lol. kids 🙄🤣 so i never get to make it from scratch much but i figure i better blog it cuz i might forget how 🤣 n i love it more than zats. so heres what we need
3.c long grain rice
1 lb. andouille sausage
5 to 6 boneless chicken thighs
20 to 30 small shrimps
3.c chicken stock from the pot
2.c chicken stock from box
20.oz tomatoe puree
1 can cream of celery
1 can cream of mushroom
1 green bell pepper
3 stalks celery
half a yellow onion
3 to 4 cloves garlic
3 bay leaves
2. tbsp olive oil plus more here n there lol
1/4. ts. onion powder , garlic powder, thyme , poultry seasoning , cayanne , salt , pepper and paprikadash of browning sauce , woreshire and a cayanne n vinager based hot sauce like franks or crystal

k first off we gonna poach the chicken so. in a big pot put the chicken in the fill wit water til it covers chicken by boot 1/2 an inch n bring pot to a boil then turn heat off n cover pot wit lid n let set for boot 20 min or so
while thats poachin away well take a big ceramic dutch oven n put the olive oil in and dice up the sausage and get to browning that meat up sum on med heat

after its browned up remove sausage but leave the grease n da pot. thats the good stuff lol n. put a little more oil n and drop n yo diced onion celery n green pepper n cook til tender bout 6 min or so then then add the minced garlic n cook one more min. garlic burns fast😶

k. now we gonna drop in our chicken stocks n by now chicken should be done so we can steal 2 cups of the poach water n add the store bought one 2 n also add all other wet ingredients except da paste and tomatoes and add all the seasoning n stir good wit a wood spoon in u got one. gotta break up da little bits on da bottom from cookin the sauage and add bay leaf n well fish it out later
k after its all stirred up add yo paste and tomatoe puree n cans of soups n well let that come to a boil
k. after it boils for a min. reduce heat to simmer while u chop up yo chicken n rinse off yo rice lol. then add your chicken n sausage back to da pot n bring back to a boil and as soon as it boils turn heat off n put rice n stir real good put lid on and place in oven at 325° for 40 min


while thats cookin. we can get on da skrimps lol. just need to grab a pan n put a bit of olive oil on it and drop the shrimps in after u season em wit salt. pepper. onion n garlic powder. paprika n cayanne if ya want some kick. id go wit slap yo mamma but yall babys round here. lol. jk. but ya. we just heatin up some cuz i buy the pre cooked ones. so we just gettin the seasonin set in on em. cook bout 5 min. med heat. dont want em mushy or we would of cooked em in da pot. the skrimps go in last so they keep that good texture

awww ya. rice cooked up perfect. k now. cut up some green onion for garnish n mix in da shrimp
n there ya go grab u some hot sauce n enjoy😁
