
Been a few years but im back. got a few more recipes to get thru for da fam then they can figure it out wit tik toc n da others lol. but ya neva get da original n thats y i do this so this is a fav n da consume hits hard af. can drink it all day lol n u can use da meat for quesabirrias. tacos. nachos …ect. n u can use da consume for ramen or soup. or to take a bath in lol. no ones judging u. k heres what we need
5 lbs chuck roast
4 boxes of 48oz beef stock
4 reg heads of garlic
2 yellow onions
5 to 10. dried chilli arbol. the more the hotter
4 dried chilli anchos
10 dried chilli guajillos
4 roma tomatoes
4oz tomatoe paste
1 tbsp knorr beef bouillon
1 tbsp knorr tomatoe bouillon
1 tbsp badia complete seasoning
1 tsp onion powder
1 tsp garlic powder
1 tsp cumin
1 tsp salt ( 1st 3 ingredients have salt so u can admitt this later after tasting. well.get there)
4 bay leaves
1
tbsp sazon seasoning for meat
1 bunch of cilantro
1 white onion
pack of large flour tortillas
pack of yellow corn tortillas
limes

any white shredded cheese like queso. chihuahua. or mozz itll all work
4 cups water or more well c
k so grab yo meat n cut it into 4 big chunks. easier to fish out later


k then toss em in a big ass pot

next pour yo 4 big boxes of beef stock or broth in along with the dried chillis bay leaves garlic tomatoes and onions. and. u dont have to de seed em or anything. just toss in the chillis. take the outer skin off onions n throw em in whole. peel some skin off garlic n toss it in. trust me. itll be fine. we straining everything later so toss em all in u can cut top stems off romas n quarter em tho but it dont matter dont be scurd we gonna be ok





k so now we gonna set the burners to med high n bring to a boil n let it go for 2 hours uncovered then it should look a bit like this

now we need to get dat beef outta da way. its not tender yet but we gotta consentrate on da consume atm. so pull da meat out n set it in a bowl

now we gotta get all that guud guud outta da pot to blend it up so pour pot into a strainer OVER. I REPEAT OVER another POT to keep the consume. dont loose it or game over lol. we just gotta get da onion garlic tomatoes n chillis out to blend em up n get all that flavor left in em n u need a small hole metal strainer cuz we dont want any chunks n our consume. or do we lol. up to u yo



k now we strained the pot into another pot n got out da guud guud. pour that new pot back into the old pot but now we using a mesh strainer to collect any smaller shit like seeds n garlic skin …ect

k now put yo meat back in da pot n set burner to med n start cooking again n take the strainer of that guud guud mix of awesome in put it in a food processor n batches n blend da shit outta it adding a little stock from the pot like a cup or so


k after blending. take that mix of heaven n run it thru that metal mesh strainer into a bowl to collect any juices u can. use a rubber spatula n press out as much as u can n scrape the underside. no flavor left behind then add to da pot n toss the pulp away. or dry it out n make seasoning. u do u but that little extra step is what makes da birria hit. flavor bomb yo




k now that all da flavors are back in da pot time to add da tomatoe paste n seasoning( knorr beef , knorr tomatoe n badia complete and salt ,sazon is to add to meat outta da pot) and add your water also. then let simmer on med for 2 more hours or until meat is at 200° intetnal temp n consume should be reducing as it cooks so add more seasoning if needed or more water if seasoning is to strong. this is the dance u do to make it how u like. if weak. add a bit of all the seasonings if to strong add water


k meat is tender n your consume is to your liking (cuz u been tasting it as u go ) so now its time to remove da meat n shred it up n add your sazon to it n leave it seperate from the pot cuz u want that consume to be free of crap in it cuz its gods nectar. if u kno u kno

k now. heat up a griddle. cast iron pan. skillet. what eva u got. but heat to med n oil it up good. i use a steelmade griddle

k griddles hot. now we gonna do quesabirrias first so grab u a large flour tortilla n dunk it n da consume


then slap it on da grill, pan ,griddle or what eva u usin lol then hit it wit dat meat n cheese. n go heavy on cheese but light on meat cuz too much meat is chewy af. but u do u boo



k. give it a few min then dip another tortilla n da juice n slap it on top

then flip

n flip again in a few min. checkin the underside to make sure your cooking surface isnt to hot n u need a big spatular

hahaaahaa. big ol spatular. its a pancake flippa. just flexin dont hate
k when cheese is melty n tortilla is crispy then remove to a wire rack to cool a bit before cuttin so it stays crispy

now grab u some yellow corn tortillas. dunk em in da consume n slap em on the griddle adding abit more oil if needed then hit em wit cheese n beef n flip em in half n cook both sides for a few min til cheese is melted. pro tip use a fish spatular. it bends n flexes n makes flippin n forming way easier. i only use em for this n burgers. shhhhhh. its a secret wink wink



crank out as many as u can n then time to plate up. pour u a cup of consume n cut up yo quesadillas n add yo onions n cilantro n what eva else ya want. its time to eat yo

i dont have pics of em but heres da 3 i usually make. all ingridents are put in a food processor til smooth n im guessing with the measurements so make to taste. yo and they all start with 1 1/2 c real mayo. not miricale crap whip ever. we dont whip round here we may nay k. n 1c sour cream so i wont put these in da recipes below cuzz im savin typing time now lol we covered it
Chipotle Cream
1 can chipotles n adobo sauce
1/2 tsp onion powder. garlic powder salt and cumin
1 tsp lime juice
blend chill n eat
Tomatillo Avacodo Ranch
1 tomatillo
1 large ripe avacodo
1 pack ranch dressing package
1 tsp lime juice
1/2 tsp dried dill
1 tsp jarlic
1 small 4 oz can jalapenos
Jalapeno Creme
1 4 oz can jalapenos
1 4 oz can chillies
1/2 tsp. onion powder. garlic powder. salt and badia complete seasoning
1 tsp lime juice
k there they are. if too runny. add more mayo. n season n taste as ya go
