beefy veggie goodness in january hell ya lol this soup gets tore up by everyone every age round here in da winter n they dont even know its good for em great to whip up on a cold sunday n eat on for a few days n all done in one pot heres what we need
1 to 2 lbs. stew meat or roast or any beef u got or is on sale
sum olive oil
1/2 tbsp. minced garlic
half a small onion minced up good
2 32.oz boxes of beef broth
3 beef boulion cubes
1 can campbells beefy mushroom
1 tbsp. worsechestershire sauce lol i dont use auto correct sooooo……
1/2 .c medium barley i know i know wtf is that well here. itll thicken da soup n looks n taste good lol. kinda like doughy beans i call em white eye peas cause they double n size n look like they stairin at u lol
6 oz. can tomatoe paste
2 bags of 14.4 oz frozen mixed veggies ( green beans corn peas carrots )
16 oz. frozen cubed country style hash browns or 1 lb. diced up potatoes
1/2 tbsp. onion powder garlic powder
1 tbsp.salt
1/4 tbsp. pepper
2 tbsp. corn starch
1/2 c. water
k first we need a big pot n put a few good shakes of olive oil in it and dump your meat n minced garlic in. im usin stew meat
using med high heat cook da meat till bout med to med well or just brown em for bout 15 min( garlic not pictured i was watchin football n forgot. eat me lol)
then remove em from pot to cool on a plate where well cut em into pieces its ok to still be a bit pink cause they gonna cook more
k sorry bout that round arrow thingy lol not sure how i did it or how to get rid of it so it lives there now lol weird. im not good at this blog shit. but moving on k so we now got a pot wit beefy goodness so add yo 2 boxes of beef broth, campbells soup, boullion cubes, worctershire sauce n yo diced up onion which i puree wit my slap chop lookin thing lol. i sneak onions into sooooooo much stuff using this lol
n we should look bout like this
now that we added all that to da beefy fat n oil left in da pot well bring it to a boil n then add our crushed tomatoes n paste n barley
now bring this to a boil then add the potatoes mixed veggies n the seasonings and our meat and bring to a boil again n stirr every 5 min cause it will stick lol
after it starts boiling mix the corn starch n water 2gether n add it while its boiling
after u add that let it boil for a few min then reduce heat to low n simmer for 1 hour to reduce a bit stirring every 5 to 10 min
now taste n adjust seasonings then grab u sum crackers n boom enjoy. its even better the second day
