ST PADDYS DAY SHEPARDS PIE

ahhh st pattys day. or as i like to call it St reubens day😁 is one if my fav of the year. gets my little bit of irish blood a goin to which besides endless reubens i make n corned beef cabbage n taters. i also make.my pie. shepards pie. or. as it really is called cottage pie cuz its beef not lamb but. i call it as i c it so. heres what we need

4.lbs. chuck roast

8.lbs. potatoes

half a yellow onion diced

olive oil

48.oz beef broth

1.ts beef flavored better than bouilion

a big bag mixed veggies. like corn green beans peas n carots n like 2 pounds at least

1/3.c flour

butter

8.oz block cream cheese

1/3.c milk

salt

onion n garilc powder

thyme

worstershire

6.oz tomatoe paste

1 pack of brown gravy mix

k.first we gotta get a big ol dutch oven n. put sum.olive oil in on.med heat n soften up da onion. i got a special green one just for ST PATTYS day cookery lol. youll c a red one here to cuz i forgot to take pics after boot half a bottle lol. its st pats after all so i had pics from last time in tried to blog this. anywhoo

k next add boot 3/4 of yo beef stock box n yo chuck roast

bring to a boil them cover n drop heat to med.low n simmer for 3 hours or til tender

in meantime wash n peel potatoes n cut into big chunks n soak for now

after meats been cookin for at least 2 hours. go ahead n start to bring your big pot of potatoes to a boil n boil for bout 40 min or til tender n mashable. but leave em in da water after they done boiling till we need em. n lets check on da meat

meat fall apart tender so well remove it to da side n cut it up n get back to da rest of it

now we can add our seasonin. paste and woreshire n.bring to a light boil after that then mix remaining beef broth wit 1/2.c flour and gravy mix.n add it to da pot.n. lightly boil for 5 min then reduce heat to med n remember to stir often n it should thicken up a bit

k then add yo veggies n beef back to da pot

n.let it simmer on low while we drain our potatoes n add em back to da pot

k after they back in there mash em up a bit to get sum steam n moisture out then hit em hard wit butter. like 2 sticks n that whole block off cream cheese n mash away. adding salt to taste. add milk if it needs to be creamier

after they to your liking toss em on top the filling till they completly cover everything

then put the pot on a big cookie sheet cuz it will ooze out a bit while cookin n off to da oven at 375° for 50 min.or til mashed taters are a golden brownish
