go deep or go home lol i just started makin these this year as requested by one of my boys n im glad he did cause they are damn good n better than u can buy round here n im 147 miles away from da birth place of these pies so unless imma jump in da truck for one i had better figure out how to make one as close to chi town as i can get or id be doin sum traveling
k heres what we need for da dough( makes 2 pies)
3 1/4.cups all purpose flour
1/2.cup yellow cornmeal
1 1/4.tsp salt
1.tbsp sugar plus 1.tsp sugar for yeast
2 1/4.tsp dry active yeast
1 3/4. cup warm water
1/4.c melted butter
olive oil for coatin
for da sauce well need
28.oz crushed tomatoes
6.0z tomatoe paste
half a med white onion diced fine
1.tbsp minced garlic
1 1/2. tsp salt
1/2 .tbsp italian seasoning
1/2.tsp onion powder
1/2.tsp garlic powder
1/2.tsp black pepper
1 1/2.tbsp sugar
for da rest well just need parmasean cheese shredded mozzarella cheese sliced mozzarella cheese n what ever u like. imma make one wit sausage onions mushrooms green peppers n black olives n one wit pepperoni and sausage for da little guys
k first well put all da dry ingredients( except yeast n sugar for yeast ) for da dough into a bowl
now get your paws in there n mix it up good
we’ve been here before. time to put da yeast into da warm water( tempt out to 110°) wit da sugar n give it bout 10 min to activate and put your butter n da micro for 3o sec at a time til its melted. after butter cools n yeast is foamy its time to mix em in and stir til its all combined
if after u mix it up and it still not stickin just add sum warm water i always have too n if its to soupy add sum flour but it should hold together like this while u stir
after u got it all holdin 2gether use your hands n beat it up n knead it for bout 4 min or so unless u got a kitchenaid wit a dough hook lol then i hate u. u suck lol. dear santa…….. but anyway we should be bout here after 4 to 5 min of kneadin
after its been thru ufc 15o its time to grease a bowl wit a bit of olive oil n.place da dough ball in it rollin it around to cover it in oil then place sum foil over da bowl
pre heat da oven to 250° then after its there turn oven off n put da covered bowl in oven for at least a hour. da warm enviroment will help da dough rise then it should at least double in size
dammmmmn .sho did lol. doubled up. k first punch it down then put it on a floured surface n roll or press it out to get out any air bubbles itll deflate. kinda fun lol
then roll or press it out on to a big flat sheet n cut it in half so we can form 2 dough balls cauz we makin 2 pies
after they seperate ball em up n place em each in a olive oil greased bowl. cover em n put em in da fridge for least a hour to rise again ya u really gotta wait on this dough but its really worth it lol k while we wait we can get on da sauce. grab the onion and throw it in da food processor along wit da minced garlic and chop em up real fine
and if u using canned whole tomatoes throw them in da processor to smooth em out
now dump it all in a pot along with all the seasoning sugar n paste n bring to a boil then simmer uncovered for bout a hour or until it has reduced sum n thickened up a bit then u can adjust yo seasonings
u can c itll reduce quite a bit. still not a real thick sauce but we dont want that for this kinda pizza since da sauce is on top
bout time the sauce is ready we can pull out da dough and grease up 2 9.in non stick pie pans or deep dish pans if u got em or even those 9.in spring pan things lol. just spray em up wit sum pam n drop a dough ball in each
now press da dough down real good n up da sides of da pan. i press it thin on da bottom n thick around da sides u know just make it look pie ish lol
now we can layer sliced mozzarella on bottom n hit it wit a bunch of cheese at least 2 cups per pie or more dont be shy lol. sorry. forgot to take a pic of the sliced cheese goin on first but its under there trust me 😉
then drop in da veggies and meat. n just like a regular pizza i put da sausage on raw n it cooks just fine i like them big pieces lol
now pour da sauce all over till it covers da pies but not all da way to da top cauz after da dough cooks it rises inward n will spill out sum sauce lol then u gotta clean yo oven lol your welcome
k brush da tops of the dough wit olive oil then off to da oven at 425° for 15 min. then well pull em. hit em wit parmasean cheese. loosely cover em in foil to prevent any over browning and to help em evenly cook inside and back to da oven for bout 15 to 20 min. check em after 15 too c if they look browned n ready to go. if not leave em another 5 min. they should look like this by then
lol u can c the bottom one i over filled lol. thats how i learned lol oh well more goodness in it
let em rest for bout 10 min then grab u a spatula n if it really was a non stick pan n u sprayed it itll come right out onto a plate or rack
now your on your own cuttin em lol they got so much good good in em its hard to contain lol but the crust holds up like a champ n wont sag so if ya loose goodies grab a spoon or yo hand n pile em back on your slice lol
that crust tho lol. so good. boys actually eat it all before they grab another slice. crazy lol. gonna try makin one wit ricotta cheese spinach n mushrooms soon. u can also just use a big deep pizza pan n put da whole recipe in it n make a huge pie too. k bye
