HOMEMADE MAC N CHEESE

made 2 pans of this last nite to go wit my brisket cant put boxed shit next to a brisket what would da world come too lol. not knockin da liquid gold or kraft they work n a pinch wit kids but this dont cost much n is well worth it and is a dinner by itself cause its so thick n rich best side dish at any bbq besides moms tater salad which i need to learn lol. k heres what we need

16.oz box large elbow macaroni

16.oz shredded mild cheddar cheese

8.oz shredded marbled cheddar or colby jack

8.oz velveeta cheese

4.oz cream cheese

2 eggs whisked up n a bowl

3 1/2 .c milk

1/2.c flour

3/4.c melted butter

1/4.tsp salt

1.tsps black pepper

1/2.tbsp mustard powder

1.tsps dijon mustard

start by bringing a big pot of water to a boil and get cookin your macaroni just follow da box n only cook for bout 7 min. u dont want soggy noodles or they gonna break apart later with all the mixin we gonna do then when da pastas done cookin drain it n rinse it with cold water real good or itll all stick together when u come back for it later lol. after all that melt your butter in da microwave for bout 30 sec n add it to a seperate pot then put in da flour

turn da burners on med and start whiskin the butter n flour together til u get a paste n let cook bout a min after that

now we got our roux or thickiner lol well whisk in da milk eggs cream cheese mustard and seasonings till its all blended

now dump in da 16.oz of shredded cheddar

now keep heatin n stirrin til its blended and lookin like a thick cheesy sauce

boom. liquid gold on yo stove baby lol k time to mix da noodles and da cheese sauce real good. i just use da pot i cooked da noodles in. its bigger n easier to stir in

now that we introduced the 2 we can tranfer em to a baking pan. or just eat it now lol. no no theres more cheezin to go

now grab da velveeta n cut it up into small cubes and lay em out all over

n stir it in good but dont try n break it up well do that soon

now off 2 da oven uncovered for 25 min at 350°

after 25 min well pull it n stir it up good to mix up da velveeta better then add the 8.oz of shredded marbled cheddar to da top

then back to da oven for bout 10 min

so ya its a different pan lol. i forgot to take a pic of da final product i was cuttin up brisket so thats all i could consentrate on at da moment lol. this was da second pan i made cauz i use all da mac n cheese as a distraction from my brisket so my boys dont eat it all lol now they’ll learn of my ruse lol so there ya go this versions been holdin strong for bout 3 years now
