TAMALES AND TAMALE PIE

makin tamales is just as much about family as it is bout gettin sum moist ass tamales. if u dont got a assembly line of people makin em then wheres da love and it takes alot longer by yourself lol ive made em authentic once wit slow roasted shredded pork n beef n dried chilies but it wasnt the ones i was used to from growin up eatting americaized ones from ARTS and all the seasonal dairy barn type places that pop up in da summer so i had to come up wit my own by using ground beef pork n pork chorizo so mine are not authentic but just what i want lol. heres what we need

for the dough

4.4 lb bag of tamale mix like these i use the one on da left

7.cups of the beef broth well make

5.cups shortening or lard. mmmmm

have a 40.oz bottle of corn oil on hand

3. tsp baking powder

6.tsp salt

2.tbsp chicken boulion granuales

and for the fillin

2.lbs ground beef the fatter the better

2.lbs ground pork

1.lb pork chorizo

chili powder

salt

white pepper

garlic powder

onion powder

cumin

a bag of corn husks

tomatoe juice or yo fave hot sauce

a huge steam pot

first we gotta soak our husks in cold water for bout a hour

k while they soakin well get goin on da meat. i usually mix all together except the chorizo and run it through my grinder so my meat is super fine but its not needed lol. grab u a big pot and put all the meat except the chorizo into da pot

then fill da pot bout halfway with water and bring to a boil then drop down to med low heat n make sure u break the meat up really good at first and stir it up every few minutes to keep the meat from cookin in big clumps. we want it really fine. well let it simmer for bout half a hour then well need to borrow sum of that broth its makin for the dough in the mean time well get started on da dough. find u sumthing big u can mix 4 lbs of dough in lol. i use the pan for my big electric slow cooker lol. when u got it dump the whole bag of tamale mix in and the rest of the dry ingredients and mix em up good

after its all mixed up well go grab 7.cups of broth outta da pot if da meats cooked for least 30 min n pour it through a strainer into a bowl so we dont get bits of meat which if u do no big deal lol

now that we got sum hot broth in da bowl add yo shortening to it and mix til it melts up good mmmmmm years of cholesterol in one bowl lol but this is what makes tamales moist ….fat

now add the bowl to da dry goods and start mixin by hand. but careful if the broth is still really hot lol. mix mix mix then mix more lol really get in there. after a few minutes add bout half the bottle of corn oil n keep mixin lol. yeah. yo hands will be hurtin by the time its all blended lol. we want it to not feel grainy and be really moist and dough like and will spread easily so add more corn oil as needed and broth if u feel it needs it

after u feel its good cover it wit foil n let da fats do they thing til the meats ready. oh ya lets finish that up lol. after u get all the broth out of the pot that u need thats when u add the chorizo n bring to a boil again then simmer bout a half hour and also add the seasonings. which i never measure out for this lol. lots of chili powder garlic powder onion powder. sum salt n white pepper. little bit of cumin cause it goes along way. best taste when meat is done n adjust from there. should look bout like this before adding chorizo. lotta liquid should of rendered out on top of the 7 cups we took out and add a bit of water if needed to cook the chorizo

and boom meat fillin is done. i wait to add chorizo till after broth is taken from da pot cause the chorizo has so much seasoning and shit it turns da broth redish lol. no biggie tho but i like the look off da yellow corn dough lol and also this recipe is made for sensitve tounges lol so feel free to spice da shit outta da meat if u want like i would but i got babies eatin these lol

doughs ready. check. meats ready. check. husks done soakin check k time to assemble the troops to da table. heres their jobs. gotta put a fool on layin out da husks n pickin da good ones which are da ones that are in one piece still lol. and adding the tomatoe juice which is just used for a lubricant to help smear the dough. id rather use hot sauce but noooo. lol. now were workin on there lower right hand side of da husk cauz we gonna fold from right to left then fold the top down. youll c

good way to cheat. who wit kids dont have a hundred of these oh and u can add sum salt n stuff to da juice

k after da first job is done its time to hand it to da smear man or women lol very important job. this person must grab a bit of dough n press it out over the juice into a rectangle mostly from the middle to da right not touching the right edge or bottom of the husk and only going up bout half way. if it touches the edges no biggie but try n keep it all in but da juices. this job takes dedication choose yo fool wisely lol.

now enter da filler n folder. aka da closer lol. im drinkin sooo. heres were ya put da fillin on and fold from right to left meetin the right hand dough to da left hand dough tuckin in tight and roll to da left then fold the top down firmly pressing it all together

this recipe will.make bout 150 of these bad boys so help is needed if u wanna eat anytime soon but my help got held up that day lol

no worries i got this lol. k so now that we assemblin we need to have our big ass steam pot ready to go wit water up to the steam pan

n as u fill em stand em folded side down in da pot

after u got a pot full. place da lid on and put da pot on da stove on high til water boils then reduce heat to low n cook for bout a hour n 10 min adding bout a half of cup of water every 20 min or when needed. dont let all da water steam out lol. then boom done. fill da pot again wit reamaining tamales n repeat while u enjoy the first batch

now these are best the day u make em but leftovers freeze good n when u want one just wrap one in a paper towel n microwave one minute but best to resteam em

now take the rest of the meat you didnt use and return it to da pot and add a 6oz can of tomatoe paste and a cup of water or so to make a meat sauce n add a bit more of all the seasonings and bring to boil n simmer til u have a chili like sauce n pour it over 2 or 3 tamales n add sum shredded cheddar n now u got a tamale pie like in honor of my favorite restaurant R.I.P
