grab da cream cheese n triscuits it hot pepper jelly time ive been makin this a few times a year for bout 6 years now n givin it out to those who love dat sweet heat n it has a following i also make a pineapple and a peach which are made da same way n my older 2 love em all especially da pineapple on a brat burger heres what we need
2 lb.s fresh strawberries
1/4 c. lemon juice
25 reg sized fresh orange or red habaneros
7 1/2 cups sugar
2 boxes 1.75 fruit pectin
9 jelly sized ball canning jars or 4 pint sized
canning supplies. like a big pot n jar tongs n jar funnel n shit lol
k first thing we gotta do is put on sum plastic gloves n wash da habaneros n strawberries off. u gonna want da gloves while handling da peppers for sure. if u get their oils on yo hands then rub yo eyes u gonna be hurtin or worst if u gotta use da bathroom later ooooowwww lol after u wash em cut da tops off to remove da stems
next after all da strawberry stems are removed place a bunch in yo food processor n chop for bout 15 seconds
just chop em up till theres no chunks but dont over do it lol. then add pour em out to a measurin cup n add more to da processor til we have 4 cups of pureed berries. then add da 4 cups to a big ass pan n add your 25 habaneros to da processor n go nutz puree away as fine as u can get em seeds n all
now we can join them wit da berries in da pan
k go ahead n add the lemon juice n 1 and a half boxes of the fruit pectin. this shit
then stir it up n bring it to a boil over med high heat
now after its boiled for a min drop dat sugar in n stir it up good. gonna seem like alot but itll mix in
after da sugar mixes in bring to a boil for bout 2 min
now its ready to jar up so transfer it to a bowl u can pour out of
take your jars n wash em real good n fill em wit hot water then drain em so that when we fill em n process em they dont break from da heat. u can go to ball.com n look up how to can jelly if u never have. its easy tho. so anyway. its time to fill da jars leavin bout a 1/4 of a inch from da top of da jar
after u got all da good good in da jars wipe da jar rims off n place da lids n rings on and barely tighten da rings so da air can release during processing
k. i dont have pics of da processing anymore this is da second time i posted this blog lol drunk ass lost it or sumthin lol so grab u a big ass pot n fill 3/4 full of water n add da jars not touching to it. if they all dont fit then do 2 batches. bring water to boil for 10 min then kill heat n let jars sit for 5 min then remove n let rest on counter and the lids should pop within 5 to 10 min sealin in da good good. and if they dont. remove ring n lid n wipe off jar rim n reprocess but the center of the lid should suck in sealing da jar if u did it rite making da jelly good in da cabniet for a few years and im sure im not da best source for canning so like i said visit ball.com or any canning site for more details on canning but there ya go. u can c da center bubble in da lid is sucked in. thats what u want that sweet sweet sound of da jar poppin
and to make da pineapple n peach i use canned fruit n drain da juices n use da food processor just like da strawberries till i get 4 cups of pure fruit.
n u can use any fruit wit this recipe. blue berries. mango ect. up to u n da pineapple rocks on porkchops brats n chicken as does da peach or put a spoon full n sum cottage cheese. but all 3 are best wit sum cream cheese n triscuits heres da peach
