gonna keep rollin wit da bbq recipes since it summer n all but smokin meats a year round thing round here f da snow lol i dont do much chicken on da grill unless its these or shovin a beer can up a birds ass lol first we gonna need sumthin to rub da coc…bird down im strugglin lol. the happy ending bird rub is just like the rib rub but with a few more ingredients
1/2.c brown sugar
1/4.c paprika
1.tbsp chili powder
1.tbsp onion powder
1.tbsp garlic powder
1.tbsp cayenne powder
1.tbsp salt
1/2.tbsp black pepper
1.tbsp mustard powder
1.tsp cumin
1/2.tbsp white pepper
1/2.tbsp ground ginger
1/4.tsp thyme
1/2.tsp rosemary
1/8.tsp sage
1/4.tsp curry powder
1/4.tsp turmeric
4.tsp chicken boullion powder or 6 chicken boullion cubes run through a coffee bean grinder
mix it all by hand and store it in a air tight container
pic look familar lol. k so rubs ready now we need sum chicken were gonna use any old chicken thighs on sale
so we got da rub n chicken ready now we gotta brine them birdies n to do that we need
1 bottle italian dressing
bout 1/2 cup apple cider vinager
1/4 cup molasses
1/4 cup of our rub
1/4 cup brown sugar
2 cups apple juice
this is gonna tenderize da crap outta them n add tons of moisture and flavor just put da birds in a big zip lock or food saver bag n add the ingredients and let sit in da fridge for at least 4 hour or overnite
oh man that brine smells good id almost risk da salmonella to drink it lol k movin on so after its set up long enough we gonna take da burds out da bag n put em in a aluminum pans
after u get em in da pan we gonna hit em hard and heavy wit da rub on both sides so u gotta pick em up n hit da under sides first then the tops so u dont disturb da rub or do what u want its your chicken u choke it lol. cant help it sorry
now go to da fridge n grab u 2 sticks of non salted butter n cut off pats n put em all along the pan one stick per pan
the butter will melt bout half way up da burds while they smokin and keep them moist while allowing the rub to carmelize and form a bark on da skin
they ready to get on da smoker now. as usual im using apple. pecan and hickory and da smoker is at 250°
on they go for bout a hour or til there at about 150° internal temp
bout ever 20 min well hit em with sum spray butter. ya its a thing. MERICAAAAAAA. its a good way to keep da skin moist without disturbin da rub
well been bout a hour n da burds want outta their butter bath jacuzzi so were gonna put em on racks n transfer em to my regular weber grill thats set at 400° to bring em up to temp quick and render the skin more bite through and less chewy. their at bout 155° internal temp and we want them at the very least 165° which is bout the lowest u wanna go on chicken to be safe. i think 145° is the lowest temp u can eat chicken by gov standards but dont listen to me lol. im drinkin but the lower u go safely the juicier they gonna be
oh and the weber is set up for indirect heat also and no wood added cause chicken only needs alittle bit of smoke like we’ve done and u can over do it very easy which will bitter it up i found lol your welcome. i found these little grill rack trays at kroger of all places n had a grillgazam cause my lifes that exciting right now lmfao
oh and after u transfer em go MERICAAAAA again on they ass
wow my new phone takes decent pics lol cool n all i have too do is say shoot so ya im the guy now standin in his yard leanin over his grill wit his phone yellin shoot lol fml ok anyway now we transfered em n sprayed em down so well put da lid on da grill n check the internal temp in bout 15 min n c where we at. feel free to go MERICA on em anytime lol
we got to 170° internal temp after 20 min so i pulled 5 cause i like sum without sauce but 5 remain on da grill so now enter da dirty burd meat mudd well sauce em wit da lid off n let em sit on da grill for bout 10 min so da mudd can set up
